Lemon Coconut Energy Balls
Ingredients
- 1 cup Medjool dates, pitted
- 1 cup unsweetened shredded coconut
- 1/2 cup almond flour
- zest of 1 lemon
- 2 tbsps lemon juice
- 2 tbsps date syrup
- 1/4 tsp vanilla extract
- pinch of salt
- extra shredded coconut for rolling
Instructions
- In a food processor, blend the pitted dates until they form a sticky paste.
- Add the shredded coconut, almond flour, lemon zest, lemon juice, date syrup, vanilla extract, and salt to the food processor. Pulse until the mixture is well combined and forms a dough-like consistency.
- Roll the mixture into bite-sized balls using your hands.
- If desired, roll the balls in shredded coconut to coat the exterior.
- Place the balls in an airtight container and refrigerate for at least 30 minutes to firm up.
