Ingredients

  • 1 cup Medjool dates, pitted
  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • zest of 1 lemon
  • 2 tbsps lemon juice
  • 2 tbsps date syrup
  • 1/4 tsp vanilla extract
  • pinch of salt
  • extra shredded coconut for rolling

Instructions

  • In a food processor, blend the pitted dates until they form a sticky paste.
  • Add the shredded coconut, almond flour, lemon zest, lemon juice, date syrup, vanilla extract, and salt to the food processor. Pulse until the mixture is well combined and forms a dough-like consistency.
  • Roll the mixture into bite-sized balls using your hands.
  • If desired, roll the balls in shredded coconut to coat the exterior.
  • Place the balls in an airtight container and refrigerate for at least 30 minutes to firm up.
