Ingredients:
- 1 3/4 cup flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup honey or maple syrup
- 1/4 cup greek yogurt
- 1/4 cup olive oil
- 2 eggs
- 1 tsp vanilla
- juice and zest from 1 lemon 
- 1 cup blueberries (fresh or frozen)

Instructions:
- Preheat oven to 350F and grease loaf pan
- In a bowl, mix flour, baking powder, and salt
- In another bowl, whisk together greek yogurt, honey (or maple syrup) , olive oil, eggs, vanilla, and lemon juice
- Add the dry ingredients to the wet ingredients and mix
- In a small bowl, toss blueberries with a little flour to prevent them from sticking to the bottom of the pan
- Gently fold blueberries and lemon zest into the batter
- Transfer to a loaf pan and bake for 50-55 minutes or until a toothpick comes out clean

Carrot Cake Baked Oats
Ingredients:
- 1 cup oats
- 1 tsp baking powder
- pinch of salt
- 1 egg
- 3/4 cup milk
- 1 tbsp maple syrup
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup shredded carrots

Optional toppings: yogurt, shredded carrots, and walnuts 

Instructions:
- Blend all the ingredients together except the carrots. 
- Stir in the carrots, then divide between 2 ramekins. 
- Bake in the oven at 350°F for 20-25 minutes. 

* If topping with yogurt, wait for for baked oats to cool so the yogurt doesn’t melt.

Recipe:
Peanut Butter Filling
• 4 pitted medjool dates
• 1/2 cup peanut butter
• 1/2 cup almond flour

Add all ingredients to a food processor or high-speed blender. Blend until it forms a thick dough. Scoop out using a tablespoon, flatten into patties, and shape like eggs. Set aside.

Chocolate Coating
• 1 1/2 cups dark or semisweet chocolate chips
• 2 tbsp peanut butter
• 2 tsp coconut oil
• Flaky sea salt (optional)

Microwave chocolate, peanut butter, and coconut oil in 30-second intervals until smooth. Dip each peanut butter egg in chocolate. Optional: sprinkle with sea salt. Chill for 1 hour or until set.
